Make Healthier Choices This Year With Campus Dietitian Erica Rush

Erica Rush, MS, RDN, joined Seton Hall University and Gourmet Dining Services in the Fall as the new campus dietitian. Rush, a licensed registered dietitian nutritionist, brings a wealth of knowledge and a strong commitment to enhancing student wellness through nutrition education and personalized dietary counseling.

In her role, Rush is responsible for increasing awareness about healthy eating habits and accommodating dietary needs across Seton Hall University and other local colleges. She conducts weekly tabling events in the dining hall on Thursdays, where she engages students in discussions about nutrition, offers one-on-one counseling sessions, and presents on various health topics.

"Each week, I focus on a different superfood or health concern to educate our students. We recently highlighted the benefits of carrots, incorporating trivia and sample carrot energy bites to demonstrate how tasty and beneficial they can be," said Rush. These events also feature food tastings and interactive trivia, making learning about nutrition both fun and engaging for students.

Rush advises students on how to make healthier choices in the cafeteria, emphasizing the importance of balanced meals that include lean proteins, non-starchy vegetables, whole grains, and moderation in the use of condiments and sauces. She personally recommends the Tex Mex station for a nutrient-packed meal, suggesting the addition of extra vegetables from the salad bar for added fiber.

Looking to the future, Rush is excited to launch the Healthy U challenge in March, a 28-day program aimed at encouraging students to adopt healthier lifestyle habits. "The challenge is designed to help students make positive changes in their lives, with the opportunity to win prizes. It's about creating sustainable, healthy habits," Rush commented.

Rush’s expertise and work reflects Seton Hall University's commitment to student health and wellness. Her efforts to provide tailored nutritional guidance and promote a culture of health on campus are key to fostering a supportive environment where students can thrive academically and personally.
